Our crabs are caught daily from the crystal-clear warm waters of the
Aegean archipelago, and with all their proteins, vitamins, and minerals,
they form a low-calorie protein source, rich in omega-3 fatty acids.
On the day they’re caught they are handpicked, steamed, and then care-
fully crafted into one of our special crab delights.

Our crabs are carefully cleaned by hand, a delicate process that protects their natural structure and ensures the authentic taste of the meat. The de-shelling is done gently and without the use of chemicals, preserving purity and quality.

Because crab cleaning is one of the most demanding tasks in sea- food preparation, our team undergoes up to six months of training to master this artisanal technique.

We take pride in offering the only non-pasteurized crab on the market, safeguarded through High Pressure Processing (HPP), also known as cold pasteurization. Unlike conventional methods, HPP extends shelf life while keeping the product’s freshness, texture, and flavor fully intact.

To make the most out of our prized Hellenic Blue Crabs, we have devised a strong and intense crab stock, slow simmered to capture every nuance of the sea. Rich in natural umami, this stock elevates any recipe, serving as the perfect base for a creamy risotto, a delicate pasta dish, or a refined sauce. Its depth of flavor brings out the sweetness of shellfish, complements vegetables beautifully, and pairs harmoniously with both seafood and meat.
