Caviar represents the pinnacle of premium seafood, combining meticulous cultivation with expert handling. Aging is primary to caviar, as it allows the salt to integrate evenly and the natural flavors of the sturgeon eggs to develop, creating a delicate balance of taste and texture. Shorter-aged caviar offers a subtle, buttery flavor, while longer-aged varieties deliver a more pronounced, complex profile with layered notes of the sea, nuts, or vegetation. 

Our caviar selection comes from three sturgeon species, farmed in France’s Aquitaine region, each with distinct characteristics and maturation stages:

Baerii Caviar

Baerii Caviar

Delicate and buttery, Baerii caviar develops subtle flavors with layered complexity through careful maturation. 

Maturity: 8 years to reproductive age 
Pearl Size: Dark brown, ~2.5 mm 

Varieties 

Primeur Baerii: 
Aged <3 months; buttery with subtle notes of green tea and salted brioche. 

Vintage Baerii: 
Aged 8 months; richer flavor with hints of black olive and fresh oyster. 

Origin Baerii: 
Aged ~12 months; salt penetrates the core for a layered flavor with pepper and seaweed notes

Oscietra Caviar

The first 100% French Oscietra! It offers a harmoniously balanced taste, combining a mild, buttery texture with refined, golden-olive pearls. 

Maturity: 10 years to reproductive age Pearl Size: Gold-olive, ~3 mm

Sturia Oscietra: 
Fresh, non-pasteurized; delicate, harmoniously balanced buttery texture. 

Prestige Oscietra: 
Premium selection; largest pearls (>3 mm), sweet floral notes of honey and peach.

Beluga Caviar

The top of the top and 100% French! Our Beluga offering features large, grey-silver pearls with a rich, distinctive flavor, highly valued by connoisseurs worldwide. 

Maturity: 20 years to reproductive age Pearl Size: Grey-silver, up to 4 mm
